Production of leaf protein concentrates from cassava: Protein distribution and anti-nutritional factors in biorefining fractions

Nowadays, cassava leaves are mostly treated as a byproduct of root production, yet this readily available biomass is rich in protein with balanced content amino acids. Cassava therefore represent promising, underutilized for extraction proteins. The purpose study was to provide updated information on the feasibility producing leaf concentrate use feed and food. In context, concentrates were refined from using different precipitation methods refining process evaluated focus protein, acids selected antinutritional factors. Crude mainly distributed press cake during two processing steps, i.e., pressing precipitation, between 21% 26% (w/w) crude recovered concentrates. After drying, these contained 40–45% an acid profile comparable soybean tolerable levels tannins (>1% TS) purposes. However, did not significantly reduce cyanogenic potential, total amount releasable HCN, which accumulated dried product around 150–250 ppm. This lies above 10–50 ppm deemed safe food feedstuff by several safety authorities. Based results, appears but additional research required evaluate its full especially relation products.
